Naturals tend to have more fruit and fermented flavors because the bean has more time to interact with the natural sugars from the cherry as enzymes break down the mucilage around the bean. To have consistent quality we carefully dry naturals, turning them often and removing over-ripes then to make sure off flavors won't emerge in the roasted coffee.

Washed coffees are prized for their acidty and vibrant notes. Removing the entire cherry prior to drying allows the intrinsic flavors of the bean to shine without anything holding them back.

Kochere Banko Gotete coffee has a bright acidity along with intense, clean tastes and a complexity of floral notes in the aroma, sometimes with a hint of toasted coconut. It has a distinctively fruity flavor profile and a bright floral aroma.
